Why do you need fridges for chocolate? The oxidation of chocolate is exactly what every chocolatier wants to avoid. To get the best results you need to store your chocolate in a cool, dry place. These units also have special hot gas defrost system that defrosts the water evaporation system without adding energy WDS (water dissipation system). You can configure the Friulinox pastry cube according to production needs, urgencies, or the time of year and thus it makes you more flexible to manage different varieties of products such as cake bases, semi-finished products, creams, glazes, mousses, semifreddos, or even ice cream
